This apple cupcake is super easy and just the right blend of cinnamon and sweet.
If you’re like me and like to bake treats which are quick and easy in the kitchen yet still taste completely homemade, this recipe is for you!

Cinnamon Spiced Apple Cupcake Ingredients:
1 box spice cake mix
2 Granny Smith apples, peeled and chopped up into small pieces
1 3.4 ounce box of Cheesecake instant pudding mix
1 cup applesauce
1/2 cup sour cream
4 eggs
1/4 teaspoon ground cinnamon
1 tablespoon pure vanilla extract
1/2 cup chopped pecans
Directions For Apple Spiced Cinnamon Cupcakes:
- Preheat oven to 350 degrees.
- In a large bowl, whisk together the dry ingredients: cake mix, pudding, cinnamon and brown sugar.
- Mix in the applesauce, sour cream, eggs, vanilla extract until combined (don’t over mix.)
- Fold in the apples and pecans.
- Fill cup cake liners 2/3 full.
- Bake at 350 degrees for 18-24 minutes.
- Cupcakes are done when a toothpick inserted comes out clean.
- Cool to room temperature before frosting.
Ingredients For Salted Caramel Frosting:
10 ounces cream cheese – softened
6 tablespoons unsalted butter – softened
1/2 cup salted caramel sauce
2 teaspoons pure vanilla extract
4 cups confectioners sugar – add a bit more if needed to thicken
salt flakes (optional)
Directions for Salted Caramel Frosting:
- In a large bowl beat together cream cheese and butter – mix until combined and light and fluffy.
- Next, add in 2 cups of the confectioners sugar, then mix on medium low until combined.
- Then add vanilla and caramel sauce and beat until smooth.
- Add the last 2 cups (or more if needed) of confectioners sugar and mix until smooth.
- Find your favorite piping tip and bag and pipe the frosting on the cupcakes.
- The best part, the caramel drizzle. Drizzle with caramel sauce, sprinkle with sea salt (optional.)

I had a question about the brown sugar mentioned in step 2 of cake instructions.
Is there supposed to be some brown sugar in the cake? Also I assumed you meant 1/2 cup salted caramel in the frosting? I did it that way and it was perfect. This is a keeper.
