Apple Hand Pies
Mini apple hand pies are SO easy and so GOOD!
They have that buttery, flakey crust that we all love and are stuffed full of delicious apples, walnuts and just a hint of cinnamon.
Basically, a true comfort food which tastes like early fall to me.
Bonus points, because these also make your home smell amazing.
RECIPE FOR MINI APPLE HAND PIES
Prep Time: 25 minutes
Bake/Cook Time: 20 minutes
Total Time: 45 minutes
Serving Size: 8 servings
Ingredients:
11 oz box of Pie Crust mix
2 cups apples, diced
small squeeze of fresh lemon juice
pinch of brown sugar
1/3 cup sugar
¼ cup all-purpose flour
1 teaspoon cinnamon
1 teaspoon vanilla extract
½ cup walnuts, chopped
1 egg, beaten
1 tablespoon milk
1 tablespoon butter (optional)
Directions:
Heat the oven to 400 degrees Fahrenheit.
Make pie crust according to instructions on the box.
Roll out pie crust on a lightly floured surface until about 1/8” thick.
Using a 4-inch cookie cutter, cut as many pieces as possible before collecting scraps, re-rolling, and cutting remaining hand pie pieces.
You should have around 16 pieces (enough for 8 hand pies.)
In a medium bowl, combine the diced apples, sugar, lemon juice, brown sugar, flour, vanilla extract, and chopped walnuts.
Stir to coat the apples and walnuts with the mixture.
Arrange half of the cut pie crusts on cookie sheets lined with parchment paper.
Spoon the apple pie filling mixture onto the pie crusts, leaving room around the edges.
Put a small cube of butter on top of the apple filling if desired.
Place remaining pie crust pieces on top of the apple filling and use a fork to seal the edges.
In a small bowl, combine the egg and milk, whisking to combine.
Apply the egg wash to the tops of the pie crusts using a brush.
Using a knife, cut 4 slits in the top of each pie and sprinkle with sugar (if desired.)
Bake for 15-20 minutes, in the preheated oven or until the hand pies are golden brown.
Remove from oven and allow to cool for a few minutes on a cooling rack.

How do I store the Apple Hand Pies?
You can store the hand pies in an airtight container at room temperature for 3-5 days.
They travel well too, just wrap them in plastic wrap.
Can I eat these warm or cold?
Either!
We love them fresh out of the oven, cooled to a medium heat.
If you let them sit for about 30 minutes, they’re also great at room temperature.
Leftovers? You can toss in the microwave for about 30 seconds to reheat them, we did this a few times and they turned out great.
What kind of apples should I use?
I love to use Honeycrisp apples when I bake.
Honeycrisp apples are my favorite for any recipe.
However, any variety of apple that is good for baking will work with this.
Granny Smith apples are also great for the apple mixture in this recipe too.
If you really want to treat yourself, highly recommend a bit of vanilla ice cream!
These can also be made using Crescent Rolls!
You can switch out apples for something a bit more savory, like potatoes and mushrooms, or simply stick to sweet pie fillings, like strawberries and cherries.
