  • 2 tablespoons extra virgin olive oil
  • 1 can (14.5 oz.) fire roasted diced tomatoes, undrained
  • 1 can (10 oz.) Rotel diced tomatoes & Green Chilies, undrained
  • 1 can (8 oz.) tomato sauce
  • 1 can (28 oz.) crushed tomatoes
  • ½ teaspoon Kosher salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • a pinch of sugar
  • ½ cup fresh shredded Parmesan cheese, plus a bit more for topping

PASTA ARRABBIATA DIRECTIONS:

  1. If you haven’t cooked your pasta yet, get out a large pot of water and some salt and start boiling water. I like to add an additional teaspoon salt to the water. Cook the pasta according to the package directions.
  2. In a large saucepan or skillet, I used my 12 inch Staub Braiser, put your butter, oil and onion. On low-medium heat, cook until onions are softened, slightly translucent.
  3. Add the undrained fire roasted diced tomatoes & diced tomatoes with Green Chilies cans. Keep cooking on medium heat until it starts bubbling, 2-3 minutes.
  4. Add the tomato sauce and crushed tomatoes. Stir well with a wooden spoon.
  5. Add your favorite Italian seasoning, I like to use salt, ground pepper and lots of garlic powder. Add the sugar. Stir well
  6. Add the shredded cheese and keep cooking until all ingredients are combined.
  7. Reduce heat to a simmer and cook your pasta according to the package instructions, if it’s not already cooked. You pasta sauce should simmer for about 10-12 minutes while the pasta is cooking.
  8. Once the pasta is cooked al dente, save a few tablespoons of the pasta water and drain the rest. Then add the pasta and the pasta water to the sauce in the sauce pan. Mix until all of the pasta is coated with the red sauce.
  9. Garnish with fresh basil leaves.
  10. Serve and Enjoy!

NOTES:

  • SKILLS
  • If you don’t want to use Rotel tomatoes, you can use San Marzano tomatoes or any diced tomatoes and add 2 tablespoons chopped jalapeno.
  • For more of a spicy tomato sauce, you can add some red chilli flakes to this pasta arrabbiata recipe- the amount of red pepper flakes is up to you.
  • Top each plate with fresh grated Parmesan cheese. To make it look like snow, I use a zester. Pecorino Romano is also delicious here.
  • All leftovers can be kept in the refrigerator for up to one week in an airtight container.
  • You can rewarm this homemade pasta sauce in the microwave or in a frying pan.
  • Serve with your favorite cheesy garlic bread and a salad.
  • You can also serve with a chicken breast or sausage as a protein.
